Cabbage: Underused and Misunderstood

I think cabbage is still one of the most underused vegetables in America. Full of nutrients and vitamins, cabbage is low calorie and low fat, and it's unbelievably cheap. It's so misunderstood in America, you usually only find it drowning in a mayonnaise-heavy coleslaw. I do love coleslaw once in awhile too, but there's so much more you can do with cabbage. This Korean cabbage miso soup is delicious, low in fat and calories, and full of the healthy nutrients that cabbage and garlic contain.
