Definition: Namul refers to the seasoned vegetables often served as side dishes at Korean meals. Almost any vegetable, herb or root can be served as namul; spinach, bean sprouts and wide variety of root vegetable are popular. Preparations range from dried or raw to blanched, sauteed and seasoned. Seasonings include salt, seeds, soy sauce, garlic, chili pepper paste (kochujang), vinegar and sugar.
