Quick Pickled Cucumbers

This quick cucumber pickle recipe is ready in twenty minutes, and the sweet and salty flavor makes it the perfect side dish. With just four ingredients, you can make this really snappy, crunchy cucumber salad that is good with Korean meals and sandwiches.

Cook Time: 20 minutes

Total Time: 25 minutes

  • 4 small Korean or kirby cucumbers*
  • 3 Tbsp sugar
  • 1 Tbsp salt
  • 1/4 cup vinegar


  1. Cut cucumbers into uniform strips or round slices (use mandoline for thinner strips)
  2. Sprinkle cucumbers with sugar and salt and toss gently to combine.
  3. Add vinegar, stirring to coat all cucumbers.
  4. Let sit about 20 minutes before serving.

*You can use 1 long English cucumber if you don't have access to small pickling cucumbers, but first cut the cucumber in half, scrape out most of the seeds, and then drain the cucumber on paper towels.

I'm Puerto RIcan raised in Hawaii and enjoy foods from different countries. Excellent side dish. We love spicy foods, so I usually add crushed chilies to kick it up a notch. Thank you so much for making these easy recipes for people to enjoy everyday without the hassle looking through books...Lol
